Mom’s Italian Wedding Soup

 

Italian Wedding Soup

Serves: 6-8
Ingredients
  • 2-3 large cans of chicken college inn
  • 1 lb of ground chuck
  • 1 eggs
  • parsely 1/2 tsp
  • 1/4 tsp garlic powder
  • 1/4 – 1/2 cup bread crumbs
  • 3-4 boneless chicken breasts
  • large bunch of endive
  • For Noodles: 2 eggs 1/4 cup flour
Instructions
  1. Cook chicken breasts in water until done
  2. Mix -ground chuck, egg, salt, parsley, garlic powder, bread crumbs
  3. Add bread crumbs as needed
  4. Roll into small meatballs
  5. Brown in microwave 4-5 minutes. Turn half way through.
  6. Place chicken broth, chicken, meatballs, and endive into a large pot
  7. Bring to a boil and simmer for one hour
  8. Egg Drop Noodles- beat eggs with 2-3 TB water
  9. Add flour (almost 1/2 cup)
  10. do a test drop into broth to make sure it stays firm
  11. Then drop the rest of the batter by spoonful into broth
  12. Let noodles cook for a few minutes until firm
